Gnocchi di Zucca - Pumpkin gnocchi - We are heading toward winter and we want to eat something more warming with the colours of our autumn. We have also been working on our land preparing ourselves for winter.
This Pumpkin gnocchi recipe is much less complicated than the canonical one but the result is surprisingly similar. You don’t have to add potatoes and eggs, nor do you need to roast the pumpkin in the oven for an hour.
Ingredients: Serves 2
Pumpkin pulp, ripe 450 gr. Diced
Flour 150 gr. 1 ¼ cups - any flour can be used as long as it has starch (The amount of required flour is about ⅓ of the weight of the pumpkin pulp)
Nutmeg
Ground pepper
EV Olive oil or good cooking oil 1 tbsp / also butter can be used
Hard cheese to be grated 3 tbsp (I used Grana Padano)
Sage leaves 4 or more
Broken walnuts 3 tbsp
Butter for the sauce 2 oz
Water
Salt
Dice the pumpkin and put in a large shallow pan.
Add the oil, a couple of pinches of salt, ½ teaspoon of nutmeg powder, 2 tbsp of grated cheese and 5 tbsp of water.
Put on the stove a saucepan filled with water to boil. Add salt as you do when you cook pasta.
Lid on top, on low heat stew the pumpkin for 10 min or until soft. Add a couple of tbsp of water or more if it sticks to the pan.
Mash it with a fork or a potato masher
Now slowly incorporate the flour, mix it in with a wooden spoon. You might not need all the flour as id depends on the pumpkin. Also add ground pepper to taste.
Turn the heat off and spread the mashed pumpkin on the bottom of the pan to cool it down.
As soon as the pumpkin mush has cooled,
Make little balls about ½ to ¾ of an inch big (1,5 to 2 cm) with your hands, which must be wet, and plunge them one by one in the hot water. When they resurface it means that they are cooked. Fish them and set aside.
In a large shallow pan (you can clean the one used to make the pumpkin mash and reuse it)
add the butter, the sage leaves and the walnuts. Melt the butter on low heat. Let it sizzle for a couple of minutes and then add the gnocchi.
Toss them gently for a few minutes until they’re coated with the butter sauce.
Serve hot and sprinkle with extra grated cheese and ground pepper if you like it.
