Today, I introduced my recipe of Ponzu sauce. Ponzu is japanese traditional and popular seasoning. I used 4 types of citrus, Yuzu, Sudachi, Kabosu and lemon, but you can use other citruses which you get them. I'll introduce more recipe using Ponzu in the future. I hope you'll enjoy a japanese traditional seasoning, PONZU.
If you make citrus juice 100% lemon, i recommend to add a bit more mirin or sugar to weaken the shapeness of the acid. You like sour taste, you don’t need it.

Recipe
Citrus juice 150 grams
Soy sauce 120 grams
Sake 15 grams
Mirin 15 grams
Bonito flakes 3 grams
Konbu 3 grams
Dried shiitakemushroom 3 grams
