This Resident Evil Village game guide video shows how to kill Varcolac's - they're big werewolfs that also look like very hairy dogs. You will encounter your first Varcolac while going to the Reservoir and others can be found later on. Fighting the Varcolac isn't mandatory, because you can try to run away or sneak past the creature.
If you want to fight, then it's best to find huts and other buildings where the Varcolac can't get to you. You can hide there each time the werewolf begins its pursuit and even continue attacking the Varcolac without leaving cover. Just to make sure to stand far away from the entrance or the window so that its claws won't reach you.
Other good ways of weakening the Varcolac are setting up mines and shooting the monster with a sniper rifle from a very large distance. The Varcolacs will leave valuable treasures/loot behind.
