Ingredients:
2 sheets of ready rolled puff pastry (the roll works a lot better than the block)
100g block of brie cheese, cold, cut into small squares
1/3 cup quince jelly
1 egg, beaten
Step 1: Prepare The Pastry
Pre-heat oven to 180°C. Measure out your desired size squares on your pastry with the ruler and cut into even squares, with half slightly larger than the other half. Brush the smaller squares with the egg wash.
Step 2: Make The Bites
Place a brie square and a small dollop of jelly in the centre of each egg-washed square. Place the remaining pastry squares on top, and pinch the edges together to seal. Crimp the edges of each parcel with a fork, and brush the outside with egg wash
Step 3: Bake
Place on a lined baking tray and bake for 12 minutes or until puffed up and golden brown
