🥕🍮 Carrot Mousse à la Cezerye 🌿✨
Have you a spare (half)kilo of carrots in the fridge waiting their turn in the kitchen, like me?
Here's how to create this heavenly carrot mousse:
Ingredients (I doubled the amount, but feel free to adjust to your needs and family):
- 500g carrots
- 240ml + 2 tbsp water
- 300g sugar
- 1 tbsp cornstarch
- 180g walnuts
Instructions:
1. Peel and grate the carrots using a medium grater/food processor. Mix with 240ml of water and sugar in a saucepan.
2. Cook the carrots over medium heat for 15 minutes. Then cover and cook for an additional 30–40 minutes until the liquid evaporates.
3. Mix the cornstarch with 2 tablespoons of cold water. Pour the mixture into the carrots, stir, and cook for another 2–3 minutes.
4. Remove from heat and mash with a potato masher or blend until smooth.
5. Roughly chop the walnuts. Mix them with the carrot mixture.
6. Cover the bottom of a mold with cling film.
7. Pour the prepared mixture into the mold.
8. Cover the mold with plastic wrap. Leave the mixture to set for 3–4 hours at room temperature. Mine stayed all night in the fridge after that.
