Roast Chicken is a perfect match for herbs, and in this video, I show you a very simple technique, that will get you a ton of flavor, and beautiful crispy skin. First, make a simple herb better with a few greens. I love rosemary, thyme and parsley, and then you can slide that butter in under the skin of the chicken before roasting.
Season the chicken with salt and pepper, and as it roasts, the butter and herbs infuse with the meat, and the fat helps to brown and crisp the skin until it reaches golden brown perfection.
