PORK LOIN | stuffed with prosciutto and 🌿 pesto.
1 Whole Pork Loin
1 Tbsp oil (I used bacon grease)
1 Shallot
3 Baby Bella or White Mushrooms
2-3 Garlic Cloves
Fresh Herbs (thyme and oregano)
1 1/2 cup Spinach
@kindersflavors Salt and Pepper
2 Tbsp Pistachio Pesto
Sprinkle of Monterey Jack cheese
5-6 slices of Proscuitto
Seasonings: onion powder, garlic powder, pepper and paprika
Slice the pork loin open fully, pound it out. Season with salt and pepper. Add a thin layer of pesto, along with a sprinkle of cheese. Add your mixture of: shallot, mushroom, garlic, fresh herbs and spinach that’s been sautéed for a few minutes and cooled. Spread a thin layer of the mixture and finally layer the prosciutto.
Roll it all up and secure with butchers twine. Season the outside generously with salt, pepper, onion and garlic powder and some paprika.
In a cast iron skillet, sear the loin for about 3 mins per side (medium heat) 10-12 mins & then into a preheated 350F oven for about 25-30 mins. Let rest for 10 mins and slice. Serve.
