Being able to eat profiteroles and eclairs on the keto diet is a dream come true for me!
This recipe was made after I saw a beautiful eclair in the window display of a famous bakery shop. I knew it wouldn't be healthy for me to eat this high sugar and high carbs pastry and decided to find a solution instead of having to prevent myself of this pleasure.
So I made this recipe and now you can enjoy it too!

1/4 cup coconut flour
1 1/2 tsp baking powder

1 1/2 cups water
3 large eggs
11 1/2 oz heavy cream
1/2 cup xylitol
1 1/2 oz sugar free dark chocolate
