Recipe by Cooking With Plants - Anja Cass
CREAMY SPINACH DIP RECIPE
2 cups frozen spinach, thawed and drained
1 cup raw cashews, soaked in water for at least 4 hours or overnight
2 tablespoons lemon juice
Salt and pepper to taste
Drain and rinse the soaked cashews.
In a blender or food processor, add the soaked cashews, lemon juice, salt, and pepper.
Blend the ingredients on high speed until smooth and creamy. If needed, add a little water, a tablespoon at a time, to achieve the desired consistency.
In a mixing bowl, combine the creamy cashew mixture with the thawed and drained spinach. Mix well until the spinach is evenly distributed.
Taste the dip and adjust the salt, pepper, and lemon juice according to your preference.
Transfer the creamy spinach dip to a serving bowl.
Garnish the dip with a sprinkle of black pepper or a pinch of fresh herbs, if desired.
