Here's a quick how-to video for making a banana leaf basket to steam the Cambodian Amok I posted earlier. These can be used to steam all kinds of stuff & will impart a subtle flavour to any dish. Use a pot lid to cut the banana leaf into circles. Place each into boiling water for 20-30 seconds; this will make them more pliable & less likely to crack. Double up the circles for each basket; avoid using cracked pieces to keep them from leaking. Fold a pleat into each corner & fasten with a toothpick.
