Water Fufu is called Cassava fufu or Akpu in Nigeria. Water Fufu is made by fermenting some cassava, also known as yuca root. The fermented cassava is ground into a puree which is eventually cooked into delicious fufu.

Water fufu is usually paired with eru on the Cameroonian delicacy called fufu and eru.

If you are in the USA, you can very easily make water Fufu (fermented cassava) from scratch using frozen cassava. With a yogurt strainer or nut milk bag, straining is super easy.
