Before the slice mode was added to Simpler, the "Slice to new MIDI track" option was the way to chop samples in Ableton. And while Simpler is very quick to chop, there are still merits to this method. There are a number of slicing presets that map some of the controls in the resulting Drum Rack which allow you to instantly mangle the sample in ways that would not be available if you use the Simpler slice mode.
Another great way, which gives you a lot of control is to copy and re-order the slices right on the timeline in the arrangement view.
