With hurricanes and other natural disasters, its always good to have a few recipes in your back pocket for when you may not be sure the ingredients in your fridge are safe to eat due to power outages, or when you have to grab food and leave your house to stay safe and maybe only have a pan and a 1 burner you plug into your car. These recipes will use only ingredients you can keep with you in your car if you're on the go. They make use of a lot of canned goods, but still pack a lot of nutrients and flavor in and feed 2-3 people each, depending on how hungry you are. You can also pre measure the spices and store them in small ziplocks to pack light if you are bringing these meals on the go.

Dollar Tree Grocery List:
2 cans potatoes
1 can sliced carrots
1 can peas
1 can peas and carrots
1 can corn OR 1 can mixed veggies
1 bag egg noodles
1 can tuna
1 can cream of mushroom soup
1 box round crackers
1 box elbow pasta (or you can use the other half of the egg noodles)
1 can preferred chili
1 can fire roasted tomatoes
TOTAL = $16.25 ($1.81 a serving)
Herbed Potatoes (With Peas and Carrots):
(I doubled the recipe, but substituted 2 cans of potatoes for a can of peas and a can of carrots to bump up the protein and nutrients. I also added about 1 tsp salt as my potatoes had very little salt in them, and used only oil instead of oil and butter as butter tends to need refrigeration.)

Tuna Noodle Casserole:
1/2 bag egg noodles (about 3 cups dried)
1 can tuna (drained)
1 can cream of mushroom soup (or alfredo sauce)
1 can peas and carrots
1 Tbs chopped dried onions
1 tsp of salt (or to taste)
1 tsp garlic powder
1 tsp pepper
1 tsp parsley
1 tsp rosemary
1 box crackers (optional)
Cook noodles until al dente (about 4 minutes), drain, then add the remaining ingredients except the crackers. Stir until well combined and heated through. Top each serving with crushed crackers and enjoy.
Chili Mac:
3 cups pasta (cooked and drained)
1 can preferred chili
1 can fire roasted tomatoes (don't drain)
1 can drained mixed veggies (or corn)
1 tsp garlic powder
1 tsp chili powder
1 tsp salt
Cook pasta and drain. Add remaining ingredients and stir until well combined. Cook until heated through, and serve.
