I found these beautiful short ribs at my local butcher shop, Bentinck Packers, and I just knew that I had to have some Korean Galbi or BBQ beef short ribs.

I found a fairly traditional Korean BBQ short ribs recipe, and altered it a bit for the ingredients that I had at home. The recipe I used is as follows:

1 cup soy sauce
1 cup beef broth
1 cup brown sugar
1/4 cup rice wine vinegar
1/4 cup vodka
6-8 cloves of garlic minced
2 tbsp sesame oil
1 tsp black pepper
1 tsp Asian 7 spice
3 green onions chopped

I mixed everything together and poured it over the ribs and let them marinade overnight.

The next day, I fired up the Weber Kettle for direct cooking, and tossed in a few handfuls of black cherry wood chips to give the ribs some extra flavour. I cooked them for 5-6 minutes on one side, and then 5-6 minutes on the other, and they turned out perfect.
