You can easily store your tamales as soon as they are made. If you make them professionally, I would make them in the kitchen's brigade, garde manger where its the cooler part of the kitchen. I'm hoping these traditonal and delicious tamales make it to places where they are being discovered by wonderful chefs! Enjoy!!
