This easy egg custard tart recipe is delicious and only 43p per slice. A beautiful dessert and simple to bake. Egg custard is a classic recipe and one you will bake again and again.
Here are the ingredients and method.
For the pastry
250g / 8.8oz Plain flour 0.13
130g / 4.5oz Unsalted Butter 0.97
60g / 2oz Sugar 0.08
1 Egg 0.13
20g / 0.7oz milk 0.02
Pinch of salt
For the filling.
250g /8.8oz Double cream 0.95
250g Milk 0.15
6 Egg yolks 0.78
100g sugar 0.12
Tsp vanilla extract 0.12
A grating of nutmeg 0.04
Total cost 3.49
8 slices at 0.43
Method
Add the pinch of salt and the sugar to the flour and rub in the butter.
Beat the egg and combine it with the milk and add it to the flour.
Mix and work into a soft pastry.
Put it in the fridge for at least 30 mins.
Roll the pastry out and line a loose bottomed flan tin 20 - 22cm
Blind bake for mins at 180c / gas mark 4 / 356f for 20mins.
Remove the blind baking material ( rice or beans) egg wash the pastry and bake for a further 10mins.
Separate the eggs and put the egg yolks into a bowl.
(the whites can be kept to make a mousse later)
Add the sugar to the eggs and beat into a light creamy consistency.
Heat the cream, milk and vanilla and bring to a boil.
Add a little of the hot mixture to the eggs and sugar and stir in, then add the rest of it gradually stirring it in.
Pour the custard into the pastry case and grate a little nutmeg on the top and then bake in the oven at 150c / gas mark 2 / 300f for 40mins. Or until there is just a slight wobble to the custard in the middle.
Chill and serve.
