Loubia literally translates to ‘bean’ but it is also the name of the classic Tunisian spicy tomato based dish with white kidney beans. It is more commonly prepared with pieces of lamb, goat, or beef but our mother has often prepared hers with chicken because it was always our favorite growing up.
