This is how to make my homemade spiced Caramelised Onion Chutney recipe. It goes so well with cheese and is perfect for Christmas or any time of year. Working out at less than half the price of shop bought chutneys, especially around the festive period.
At its best any time after 6 weeks and will keep for up to year unopened

Ingredients
- 700g onions - about 6 medium
- 150ml red wine vinegar
- 50ml balsamic vinegar
- 150g soft dark brown sugar
- 2 tbsp olive oil
- 2 tsp mustard seeds
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1 tsp caraway seeds
- pinch of salt
