Hey Foodies,
Here is a new way of making Baingan curry. This is also called Eggplant and Aubergine.
Ingredients :
♡1 medium sized Aubergine .
♡1-2 Green chillies
♡ Curry leaves & Coriander leaves
♡Mustard seeds, haldi, garam masala, cumin powder
♡ Ginger garlic paste and grated coconut (optional)
Procedure
☆ Cut the onion, chilli, coriander leaves and Aubergine
☆Fry the aubergine slices with salth in a pan and cook it under a closed lit this will remove the bitter taste of Aubergine
☆ To make masala for curry, pop the mustard seeds, chillies, curry leaves and add onion slices and fry well
☆Add Haldi, red chilli powder, garam masala & ginger garlic paste, saute it.
☆Mix aubergine and cook for 5-10 minutes
☆Top up with fresh coriander leaves and some grated coconut
☆Baingan (Aubergine) curry is ready to eat
