Swedish chef Niklas Ekstedt offers Michelin-level gastronomy, prepared without electricity and gas – he creates his extraordinary cuisine over an open fire. Fire, ash and smoke are simply the ingredients. His hope for the future is that his Stockholm restaurant – Ekstedt – may be able to operate without any electricity at all.
