You expressed interest in this last year, and now it's here! Spring and Summer brings in Lavender Lemonade, and this recipe is insulin-resistant-friendly!
8 cups of water
1 cup of dried lavender
1 cup of monkfruit sweetener
1 1/2 cups of lemon
Boil 2 cups of water
Once water comes to a boil, add dried lavender and monkfruit sweetener, whisking to combine well. Allow to boil for 5 minutes
Remove from heat, cover, and allow to cool
Add lemon juice to 6 cups of room temperature water.
Strain and add the liquid to a pitcher
Stir well to combine
Allow to chill in the fridge for at least an hour
Serve with ice and a lemon wheel for garnish (optional)
