Ingredients:
Chicken pieces - 1 kg
Onion paste - 1 cup
Shredded coconut - 1 cup
Tomatoes - 2 medium
Ginger - 1 inch
Garlic - 7 to 8 cloves
Green chillies ( mild bigger size) - 3 to 5
Coriander leaves - 1/4 bunch
Turmeric Powder - 1/2 tbsp
Chilli powder (kashmiri) - 1.5 tbsp
Garam masal powder - 1 tbsp
Curry leaves - 1 sprig
Coconut oil - 1/2 cup
Water as required
Salt to taste
Directions:
1) Blend together coconut, ginger, garlic, tomatoes, chillies and coriander leaves into smooth paste using few tablespoons of water. Set aside.
2) On medium heat, add coconut oil to a claypot or pan.
3) Add onion paste and saute until it turns brown.
4) Add the ground coconut masala paste, turmeric, garam masala powder and salt. Stir well and cook for 10 mins until oil separates.
5) Then stir in 1 kg fresh chicken pieces along with chilli powder and curry leaves. Mix well until all the pieces are well coated with the masala. And leave it to simmer for 15 mins.
6) After 15 mins, add water as required. I have used 3 cups of reserved water from the spice grinder. check for salt. Cover and let it cook for 20 to 30 mins on low heat until cooked.
7) Coconut chicken is ready to be served. Enjoy!!
