Red Velvet Bundt Cake with Cream Cheese Glaze
Ingredients
For the Cake:
2 1/2 cups (315 g) all-purpose flour
2 tbsp (15 g) cocoa powder (unsweetened)
1 tsp baking soda
1/2 tsp salt
1/2 cup (120 g) unsalted butter, softened
1/2 cup (120 ml) vegetable oil
1 3/4 cups (350 g) granulated sugar
2 large eggs, room temperature
1 tbsp red food coloring (or beetroot powder for natural coloring)
2 tsp pure vanilla extract
1 tsp white vinegar
1 cup (240 ml) buttermilk, room temperature
For the Cream Cheese Glaze:
4 oz (115 g) cream cheese, softened
1 cup (120 g) powdered sugar, sifted
1–2 tbsp (15–30 ml) milk or heavy cream
1/2 tsp pure vanilla extract
For Decoration:
Crushed candy canes or edible glitter
Fresh mint leaves or rosemary sprigs (optional)
Instructions
Step 1: Prepare the Bundt Pan
Preheat your oven to 350°F (175°C).
Grease a Bundt pan thoroughly with butter or nonstick spray and lightly dust it with cocoa powder to prevent sticking.
Step 2: Mix the Dry Ingredients
In a medium bowl, sift together the flour, cocoa powder, baking soda, and salt. Set aside.
Step 3: Cream the Butter and Sugar
In a large mixing bowl, beat the softened butter, vegetable oil, and sugar together on medium speed until light and fluffy (about 2–3 minutes).
Step 4: Add Wet Ingredients
Add the eggs, one at a time, beating well after each addition.
Mix in the red food coloring, vanilla extract, and vinegar until combined.
Step 5: Alternate Adding Dry Ingredients and Buttermilk
Reduce the mixer speed to low. Add the dry ingredients in three additions, alternating with the buttermilk in two additions, starting and ending with the dry ingredients.
Mix just until combined—do not overmix.
Step 6: Bake the Cake
Pour the batter evenly into the prepared Bundt pan.
Bake for 45–50 minutes, or until a toothpick inserted into the center comes out clean.
Cool the cake in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
Step 7: Make the Cream Cheese Glaze
In a medium bowl, beat the cream cheese until smooth.
Add the powdered sugar, vanilla extract, and milk (1 tbsp at a time) until the glaze reaches a pourable consistency.
Step 8: Decorate the Cake
Drizzle the cream cheese glaze over the completely cooled cake, allowing it to cascade down the sides naturally.
Sprinkle crushed candy canes or edible glitter on top for a festive look.
Garnish with fresh mint leaves or rosemary sprigs for an extra touch of elegance.
Serving Tips
Slice and serve on festive plates, with optional dollops of whipped cream or scoops of vanilla ice cream.
Pair with a rich, spiced hot chocolate or mulled wine for a perfect holiday vibe.
