This bread is famous in the Philippines. "YEMA" is from a Spanish word that means "EGGYOLK". There are varieties of recipes using YEMA including cakes, candies, desserts, and many more. There is one city in the Philippines selling this bread and they call it "PASTEL BREAD". This recipe of mine is just perfect in sweetness that´s why I add milk and butter to neutralize the sweetness. 🍞 BREAD DOUGH:
1/3 cup (80ml) MILK (fresh or evaporated milk)
1/4 cup (60ml) WATER
👉 warm together between 30 - 45° C 👈
2 1/4 tsp (7g) YEAST
3 cups (360g) FLOUR
2 Tbsp (14g) MILK POWDER
1/4 cup (50g) SUGAR
1/2 tsp (3g) SALT
1 EGG (medium or large)
2 1/2 Tbsp (38g) melted BUTTER
Oil for spray
🥚🥛 YEMA FILLING:
2Tbsp (30g) BUTTER
1/2 can (200g) sweetened CONDENSED MILK
1/3 cup (80ml) MILK (fresh or evaporated milk)
3 EGG YOLKS (medium or large)
2 tsp CORNSTARCH
2 tsp WATER
🧈 GARNISH:
1 Tbsp (15g) melted BUTTER
✅ YOU WILL NEED:
23 X 23 cm (9 X 9 inches) square BAKING PAN - OPTIONAL
👩🍳 INSTRUCTIONS:
BREAD DOUGH - Warm together the milk and water between 30-45° C. Once done, add the yeast, mix and let them rest for 10 mins. After 10 mins., add all the ingredients in a mixing bowl; flour, milk powder, sugar, salt, egg, melted butter together with the yeast, milk, and water mixture. If you are using an electric stand mixer. use a dough hook attachment. Mix the dough for 10 mins., this is very important. You can also knead the dough by hands for 10 mins. After mixing, spray the dough and the bowl with oil to prevent forming a dry crust. Rest the dough for at least 1 Hour.
YEMA FILLING - Using a frying pan, put all the YEMA ingredients; butter, sweetened condensed milk, milk, egg yolks. But the cornstarch and water, mix first before adding to prevent clumping. Then turn on the heat between low to medium, stir, and do not leave to prevent from burning the filling. It takes time to cook the filling, that´s why include PATIENCE here. Once the YEMA is coming together then it´s done. Cooldown completely before dividing into 12 pieces. It will be hardened or firmer once cooled down.
GARNISH - It is best to brush the melted butter if the bread is still warm.
BAKING PAN - If you decide to use a baking pan, use any shape you like. Or if you don´t want to use a baking pan is also not a problem. It´s all up to you. When preparing the baking pan, I sprayed with oil and put a little bit of flour, scattered around, and removed or tap the excess flour. This process is to make sure that the bread will not stick to the baking pan.
PREPARING THE BREAD - Divide the dough into 12 pieces. Each bread filled with Yema filling. Sealed properly so that the filling will not oozing out of the bread. Rest first the bread for 20 minutes. After 20 minutes, bake at 160° C, pre-heated oven for 20-25 mins. Make sure to pre-heat the oven before baking.
After baking, brush the top of the bread with melted butter. It is best to brush the butter while the bread is still warm.
