*recipe for five 4"/10cm ramekins
● Ingredients:
butter + brown sugar for greasing and coating
2 medium eggs (100g)
½ cup (100g) granulated sugar
pinch of salt
orange zest
¼ cup (30g) pastry flour
1 cup (100g) almond flour
1 ¼ cup (300g) heavy cream
⅓ cup (75g) fresh cherries, halved
⅓ cup (75g) fresh cherries, halved
almond flakes
powdered sugar
crumble (crushed wafers) (check the recipe here: [ Ссылка ])
● Steps:
1. Preheat the oven to 350 °F (175°C).
2. Mix eggs, salt, sugar and orange zest. Mix with the paddle attachment on medium speed until combined. Add the almond flour, pastry flour and heavy cream. Pour 1 cup/120g into each ramekin. Top with fresh cherries, crumble (or crushed wafers) and almond flakes. Bake for 25 minutes.
3. Top with more cherries and bake again for 5-10 minutes.
4. Dust with powdered sugar and bake for 5 more minutes.
● Tips:
1. Grease the ramekins with butter, coat with brown sugar and keep them in the fridge until ready to use.
