Pastry Cream:
Milk 1 Liter
Sugar 120g
Egg yolks 95g
Eggs 120g
Cornstarch 80g
Sugar 120g
Butter 75g
Vanilla paste 1 tbsp
Combine milk and the first portion of sugar in a heavy saucepan and bring to a scald over medium-low heat on the front left 13,000 BTU rapid burner of your ZLINE Range.
Whisk egg yolks, eggs, cornstarch, and sugar in a large bowl.
Temper the hot milk into the egg mixture slowly, then add all milk to the egg mixture in the bowl.
Add this back to the pot and place it back on the range top. Bring to a boil whisking constantly for at least 1 minute and remove from heat.
Stir in butter and vanilla paste.
Cool to room temp and place in the fridge.
