This simple supper is inspired by Lucy's student days - but has stood the test of time. Simple, filling and delicious.
Full recipe:
1 can chopped tomatoes
Handful parmesan cheese
1 clove garlic
1 tub mascarpone
1 packet potato gnocchi
Few leaves basil
1 tsp sugar
Put a pan on a medium heat. Add crushed garlic, a tin of tomatoes, a spoonful of sugar and some cracked black pepper. Grate some Parmesan cheese. Cook the sauce for 20 minutes or so, and then cook the gnocchi according to packet instructions. Drain the gnocchi and add to the sauce. Put both into one or two ovenproof dishes, dollop on some mascarpone and sprinkle with parmesan cheese. Place under the grill and cook until golden.
