THIS WEEKS RECIPE: How to make Västerbotten Pie
Ingredients
Servings: 4-6
Dough
4.5oz. Butter (125g)
1 ¼ Cup Flour (3dl)
2 Tablespoons Cold Water
Filling
5oz. Bacon (140g)
3.5 Cup Västerbotten Cheese (4dl)
3 Eggs
1 ¼ Cup Cream (3dl)
Salt & Black Pepper
Directions
Oven Temperature: 425ºF (225ºC)
Time: 20 min
1. Preheat the oven to 350 ºF (175ºC)
2. Pinch together the ingredients for the dough and spread it out in a 10” (25cm) oven safe dish
3. Use a fork to prick the bottom of the pie and pre bake in the oven for 10 min
4. While the pie dough is in the oven start preparing the filling
5. Cook the bacon crispy then set aside
6. In a bowl add eggs, salt, Black Pepper and cream and whisk together then set aside
7. After 10 min remove pie from oven and increase oven temperature to 425ºF (225ºC)
8. Put the crispy bacon in the bottom of the dough shell and cover with Västerbotten cheese and then pour over the cream mixture
9. Bake in the oven for another 20 min
10. Let the pie rest for 5 min
11. Done! Enjoy
