Clean Monday ‘Καθαρά Δευτέρα’ comes in a few days, so I suggest you a special recipe for an incredible homemade lagana!
Clean Monday is a public holiday in Greece, where it is celebrated with outdoor excursions, the consumption of shellfish and other fasting foods, a special kind of flatbread, baked only on that day, named "lagana” and the widespread custom of flying kites, as it symbolises "trying to reach the Divine"
🌟 7g dry yeast
🌟 1 tbsp sugar
🌟 300 ml warm water
🌟 1 tbsp olive oil
🌟 1 tbsp tahini/ sesame paste
🌟 450 g flour
🌟 1 tsp salt
🌟 Petimezi (pomegranate molasses) or honey/ maple syrup
🌟 Sesame seeds
Method:
Mix all ingredients except petimezi/honey and sesame seeds, and knead into a soft dough.
Shape lagana with your hands over oiled parchment paper and let it to rise for 1 hour.
Brush it with petimezi diluted with water (1tbsp petimezi with 1tsp water), you can use honey or maple syrup instead.
Bake at 190C 20-25 min in 25 x 35cm baking tray.
