Gluten-free, dairy-free French toast. It’s totally possible. We’ve tried a lot of different recipes, but this is, by far, our favorite one. Using a cast iron skillet allows you to achieve a crispy crust that stays even when you reheat it.

Equipment:
Cutting board
Knife
Medium mixing bowl
Measuring cups and spoons
Large spoon
Fork
12” cast iron skillet
Jelly roll pan
Wire rack that fits into the jelly roll pan
Ingredients:
1 18-ounce loaf of gluten-free, dairy-free cinnamon raisin bread (We recommend Canyon Bakehouse)
1 18-ounce loaf of gluten-free, dairy-free white bread (We recommend Canyon Bakehouse)
12 eggs
3 cups soy milk (or other dairy alternative)
½-1 whole piece of nutmeg
4 TB maple syrup
About 5 TB dairy-free butter (We use Earth Balance)
Steps for Making GF DF French toast
1.) Preheat the oven to 300 degrees.
2.) Cut the bread into cubes, about 3/4 of an inch each.
3.) Place the wire rack onto the jelly roll pan. Put all the cubes of bread onto the wire rack.
4.) Bake the cubes of bread for 25 minutes at 300 degrees.
5.) Check the cubes of bread. Rotate the pans in the oven, moving the pan on the bottom rack to the top, and the pan on the top rack to the bottom rack. Bake for another 20 minutes.
6.) Mix the eggs, nutmeg, and maple syrup.
7.) Add soy milk and mix again.
8.) Check for dry, crispy pieces of bread cubes.
9.) Take bread out of the oven.
10.) Turn the oven to 375 degrees. Put the cast iron skillet on the top rack in the oven. (Cast iron skillet should be in the oven for at least 30 minutes before adding mixture).
11.) Add egg and milk mixture to the dried bread cubes. Coat the cubes evenly.
12.) Allow the mixture of cubes, eggs, and milk to rest for 15 minutes.
13.) Mix the contents of the bowl again. Allow another 15 minutes for the mixture to rest.
14.) Add butter to the skillet in the oven. The amount is your choice. (We used about 5 TB).
15.) Mix the contents of the bowl one more time.
16.) Carefully add bread to the hot skillet in the oven.
17.) Bake at 375 for about 45 minutes, until the top is crispy. Use a thermometer to check the internal temperature of the French toast. It should be at least 180 degrees.
18.) Take out of the oven. Allow about 10 minutes for the toast to cool. Serve.
