i filmed a slovenian farmer-turned-chef (@urosstefelin of @vilapodvin restaurant) who taught me (and his young country of slovenia) how to get resourceful with food.
one of the ingredients he got resourceful with was the slovenian tepka pear.
in this raw footage, @urosstefelin is creating me a special dish:
barley with tepka pear, kranjska sausage, horseradish and local butter, cheese and bacon.
delicious.
with the tiny tepka, he is carving a new culinary path for his young nation.
