Instructions:
1 Wash alligator meat and cut into bite-sized pieces.
2 In a large cast iron Dutch oven, cover the bottom with oil and heat over medium-high heat.
3 Season alligator meat generously with Louisiana Crawfish Creole Seasoning, then brown on all sides in the Dutch oven. Remove and set aside.
4 Using the remaining oil in the Dutch oven, add 1/2 cup more oil and 1 cup of flour. Cook on medium-low heat, stirring constantly, until dark chocolate brown in color.
5 Add vegetables (parsley, green onions) and cook until soft on low heat.
6 Add andouille sausage, beef broth, tomato sauce, Rotel, water, sugar, and red wine to the Dutch oven. Season to taste with Louisiana Crawfish Creole Seasoning.
7 Add alligator meat back to the Dutch oven and bring to a boil, stirring occasionally.
8 Reduce heat to simmer, cover, and cook for 3 hours until meat is tender.
9 Serve hot over cooked rice.
