Today I share how to make an easy no-knead recipe for homemade 100% rye bread with kefir.
Rye flour contains less gluten and is easier to digest, only the dough is darker in color, denser, and therefore does not rise as well.
This 100% Rye bread is very healthy and stays fresh for a long time.
This is a healthy kefir bread recipe and it's made in less than 90 minutes.

Recipe for 100% rye bread:
400g rye flour ( 2,1/2 C )
7g dry yeast ( 2 tsp )
100ml kefir
200ml water
additional 100ml water ( if the dough is too hard)
8g sea salt ( 1,1/2 tsp )
2 tbsp vegetable oil (olive oil )
Put rye flour in a mixing bowl and mix it with the salt. Then mix in the dry yeast, oil, kefir (room temperature), and warm water (not hot).
The dough absorbs a lot of liquid so you will probably have to add another 100 ml of warm water. In the end, the dough must be dense but not hard.
Put the dough into the flour-coated baking pan and let it rise for 30 minutes in a warm place.
Bake at 200 degrees (392 Fahrenheit ) for 15 minutes, then lower to 180 degrees ( 356 Fahrenheit) and bake for another 30 minutes.
