Ingredients:
2 cups almonds
2 tbsp sesame seeds (Til)
2 tbsp flaxseeds (Alsi)
1/2 cup ragi flour (finger millet flour)
1/2 cup besan (gram flour)
1/2 cup soft dates (I am using Medjool dates)
1/4 tsp cardamom seeds
Instructions:
Heat a pan on medium heat. Add almonds and roast for 7-8 minutes until aromatic. Add sesame and flaxseeds, roast for another 3-4 minutes. Let cool completely.
In another pan on low-medium heat, roast ragi flour and besan together for 10 minutes, stirring constantly to avoid burning. Let cool completely.
Blend the toasted almonds and seeds in a food processor. Pause occasionally to stir until a smooth, creamy paste forms. This process takes time as the oils release.
Add soft dates and cardamom seeds to the nut paste in the blender. Blend until the dates are fully incorporated into a smooth mixture.
Mix the date-almond paste with the roasted flours in a large bowl. Combine thoroughly until the mixture holds together.
Roll the mixture into small ladoos using your hands.
Customization:
Feel free to swap ingredients, such as cashews or peanuts for almonds, or substitute flours like whole wheat or oat flour.
These ladoos are nutritious, naturally sweetened, and perfect for snacking!
