EXTRA COCONUT CAKE. Three layers of fluffy coconut cake, rich and moist, light and airy, unapologetically full of coconut. It’s extra in every way-- extra coconut (there’s coconut oil AND shredded coconut in the batter, toasted coconut flakes to coat the outside), and visually, it’s really SOMETHING (layered, towered, fuzzy, glorious, light, airy—like a cloud, or a sweater). Chef’s kiss. This is not a casual cake, not a one bowl cake, not an “easiest ever” cake. This cake takes a bit of planning and a small amount of effort, but such a cake would stand for nothing less. You WILL need cake pans (two 8” or three 9”), SHOULD have an electric mixer (stand mixer or handheld), and I WILL ask you to cool the cakes completely before frosting. Patience is a virtue.
