(**) UPDATE 7/24/2021 – Today I learned that the thermometer used in the Zoolbia video is broken/off by 55-65 degrees (F). This means that the oil temperature for deep frying Zoolbia should be between 360-370 (F). We have corrected the recipe below in the comments.
Lesson learned: Always test and verify your thermometer before using it. This can be done by placing the thermometer in a pan of water and bringing it to a boil. After boiling the water for 10 minutes, the thermometer should read 212 degrees (F). If not, you can note the difference and adjust accordingly.

Original description: I had never made Persian (Iranian) Zoolbia. This is a very popular and delicious deep fried dessert. Versions of this awesome sweet are made from North Africa through the Middle East and all the way to the Indian Sub-Continent. The one made in India is called Jalebi and is believed to have been imported from Persia (Iran) during the middle ages. Watch me try making Zoolbia for the very first time.
