Ingredients ✨
#1 Kimchi Tomato BF Toast 0:44
olive oil for the pan
1-2 small red onions
1-2 large tomatoes
3 tbsp kimchi (vegan)
salt, pepper to taste
splash of water, if needed
2-3 slices of bread
hummus, cream cheese, other spread of choice
optional: sesame seeds, fresh herbs
→ serves 1
#2 Tofu Coconut Bowl 2:07
oli for the pan
1 block (200g = 7oz) firm tofu
1 tbsp flour
pinch of salt
2-3 tbsp kimchi (vegan)
⅓ cup - ½ cup (80ml - 125ml) canned coconut milk
salt (or soy sauce) to taste
splash of water, if needed
optional: fresh spinach, herbs…
optional: squeeze of lemon, lime juice, sesame seeds
1 serving cooked rice
→ serves 1
#3 Spicy Sweet Potato Tacos
1-3 tsp gochujang (to taste because spicy, I did 3 tsp) (OR sriracha, tomato paste)
1 tbsp veg oil
1 tbsp rice or white wine vinegar
generous pinch of salt
1-2 tbsp water
1 large sweet potato
4-6 small corn tortillas
vg sour cream
optional: spring onion, cilantro, sesame seeds, cherry tomatoes
→ serves 1-2
#4 Soy Crumble Rice Bowl 5:06
½ cup soy crumbles (~75g)
generous pinch of salt OR ½ vegetable broth cube
enough boiling water to just cover the crumbles
oil for the pan
splash of red wine (or white wine or 1 tbsp balsamic vinegar)
1 tbsp soy sauce
optional: 2-3 handfuls spinach, chopped
splash of water
2 servings cooked rice
vegan chili mayo OR (1 heaping tbsp hummus + 1 tbsp lemon juice OR water)
topping ideas: seaweed crisps, sesame seeds, spring onion
#5 Caramelized Onion & Lemon Pasta 6:57
3 large onions, cut into thin rings
3 tbsp oil (from the sun-dried tomatoes)
pinch of salt
1-2 handfuls sun-dried tomatoes, chopped
½ tsp lemon zest
juice of 1 lemon
½ can coconut milk (125ml)
salt, pepper to taste (and or soy sauce)
optional: a few handfuls baby spinach, basil, chopped; sesame seeds
→ 2 servings of cooked noodles of choice
→ if, after an hour of roasting the onions still aren’t golden brown, give the dish another 10-15 min of roasting WITHOUT THE FOIL
