This may be a basic Korean ingredient if you cook Korean food at home, but if you enjoy Korean food for its colour filled with drama (red!) and like a bit of heat, GOCHUGARU becomes a quintessential ingredient to add to your arsenal.
🤓What Is Gochugaru?
Translation: GOCHU=Chili Pepper GARU=Powder
Usually referred to as Korean Red Pepper Powder/Flakes or
Korean Chili Pepper Powder/Flakes.
🤓Gochugaru Uses
It's a must-have if you're even thinking of attempting a DIY kimchi (which you really should, it's dead simple once you get the hang of it- give it 3 chances).
🔥Spicy Korean recipes depend on the power of this spice for colour and heat.
🔥You know TTEOKBOKKI (Spicy Korean Rice Cakes), right? You can make it with this.
🤓Gochugaru Hack
There is really no equivalent in terms of flavour and heat with any other spice commonly found in the North American market. Many will give Chipotle or Cayenne a go, but it's really not a good substitute.
However if you have GOCHUJANG on hand, it's a good sub and shortcut when cooking some dishes. Gochujang is made from Gochugaru, you see.

3. How Fine is the Grind
💰Price will depend on where the peppers are sourced and processed (dried and ground). Korean peppers grown in Korea, dried naturally in sunlight and processed in Korea will be much higher in price and are considered "premium" products.
🥢Kimchi-making requires a lot of Gochugaru. If that's what you want it for, you may want bigger sizes.
If you only dabble in Korean cooking, the smaller bags will serve you well.
🥘Coarse powder/flakes are ideal for kimchi-making but do fine for soups and stews and most cooked dishes.
🥄Fine powder is reserved for a few recipes like summer kimchi (where you want a bit of colour and a hint of heat while still delivering a clear juice. Gochujang-making also requires a very fine grind powder.
👑Pro Tip: Put that Vitamix to work and blitz that coarse grind into fine and you've got yourself all-purpose gochugaru at your fingertips.
🤓Most Gochugaru you will find at Korean markets outside of Korea will be budget friendly and sourced from outside the country. There's nothing wrong with it, we do it. Made in Korea powder is painfully expensive.
✨However, if you've got some money to burn, go for it. You'll find a much more vibrant red, with better flavours (according to OPPA) but. It's definitely a splurge.
🤓Store Gochugaru in a cool, dry place with your other spices.
Keep the rest in the freezer and you won't worry about anything going to waste.
