Kadai Chicken
Ingredients for kadai masala
Cumin seeds -1tsp
Pepper 1tsp
Fennel seeds -1/2tsp
Fenugreek Seeds -1/4tsp
Coriander Seeds -2tbsp
Dry Red Chilli - 4
For the Gravy
Chicken -1 kg
Ghee or Oil -2tbsp
Cumin Seeds -pinch
Dry Red Chilli-2
Kasoori Methi -pinch
Ginger Garlic Paste -2tbsp
Onion -3
Green chilli -
Cumin Powder -1tsp
Coriander Powder -2tsp
Chilli Powder -1tsp
Kashmiri Chilli powder -1/2tsp
Garam Masala - 1tsp
Kadadi Masala -
Tomato -4
Curd -1/2 cup
Coriander Leaves -
Onion cubes -1/2 of 1
Capsicum -1
Ginger -
Method
First we can make the kadai masala. In a frying pan we need to dry roast cumin,pepper,fennel, fenugreek , coriander seeds and whole dry red chilli. Grind this masala into fine powder. Keep this aside.
For this recipe chicken with bone is preferred. Take a kadai and add ghee/oil. On low flame add the whole chilly , cumin seeds and coriander(if preffered). Saute . add some kasturi methi. Add 3 onions and 2 tbsp of ginger garlic paste. Add salt and saute on medium flame. Add 2 green chilly. Saute till the onions turn brown. Meanwhile remove the skin of the tomato and slice it , keep it aside. when the onions are done add the cumin,coriander,chilli,Kashmiri chilli , garam masala and the kadai masala powder. Saute well on low heat. Add oil/ghee if required. Add the 4 medium tomatoes. Mix well. Close it and cook well. Add some coriander leaves. Add ½ cup of curd. Mix well. If you want you can add cashew paste. Check the spices and salt. Add the chicken pieces. Mix well. Add a pinch of sugar. Close the lid and cook for 20 mins. Stir occasionally. Let the gravy drain till you prefer.
In another pan add some oil and saute some cubed onions and capsicum. Add this to the kadai chicken. Add the rest of the kadai masala. Add green chilly on top. Garnish with some more coriander leaves and kasthuri methi leaves.
You can also add some thinly sliced ginger.
