Just in time for Christmas! The kids loved these and kept asking for more. If you like peanut butter, you'll like them too!
Start by buttering a square pan (8" x 8") and line it one way with parchment paper hanging over opposite sides long enough to fold over top of the fudge & to grab and lift out of dish (see in video).
Ingredients:
225 g. Butter (2 Sticks)
260 g. Peanut Butter (1 Cup)
435 g. Powdered Sugar (3 ½ Cups)
1 teaspoon Vanilla Extract
Put butter and peanut butter in glass bowl, cover with plastic wrap, & poke holes for venting.
Microwave for 2 minutes on high.
Stir peanut butter & butter. Recover & microwave 2 more minutes on high.
Remove from microwave.
Quickly add sugar and 1 teaspoon vanilla extract, and work into thick mixture.
Add to pan and smooth, fold over paper and smooth.
Refrigerate for at least 2 hours.
