Uggani is an amazing dish made from a simple puffed ric (Borugulu or Marmaralu).This is a popular snack from Rayalseema, south Andhra. You can find Uggani being sold in road side shops in Rayalseema. They have this as a big heap with Green chilles decorated on top. Uggani is usually served with Mirapakaya Bajji. We can eat it as breakfast / Brunch /Snack /Dinner.
Ingredients:
Puff rice 3 cup
Oil 2 tb
Popu (Tadka, Tiragamata)
Chopped green chilies 3 n
Onion 1n
Curry leaves 8 n
Turmeric
Tomato 2 n
Directions:
First soak puff rice in a water 1 minute and drain the water.
Heat oil in a pan add Popu (Tadka, Tiragamata), cumin seeds, urad dal, chopped green chilies, chopped ginger, onions, curry leaves, pinch of hing, turmeric, salt, slice tomatoes, add puff rice, chopped coriander, Switch off the flame and toss it.
Serve hot with mirchi bajji.
