My wife makes our version of Borek, sometimes spelled Burek. Turkish style food made with phyllo (filo) pastry. Ground beef mince meat versions and cheese versions.
Please note that they are our own child friendly versions for us and our kids and not strictly the traditional way of doing it.

Recipe
Phyllo (Filo) Pastry.
1/2 cup melted butter mixed with 1/2 cup olive oil.
Beef filling -
500grams ground beef mince.
1 large onion.
1 Tablespoon Garlic.
1 Teaspoon paprika.
1 Teaspoon salt
1 Teaspoon pepper
Method -
Brown beef in pan and add onion and sweat until onion is clear.
Add all dry ingredients and stir for 2 minutes.
Add garlic and stir for 2 minutes. Do not burn garlic as it will go bitter.
Put aside to cool.
Beef mix MUST be cold when adding to pastry.

Cheese Filling -
Cottage Cheese 2 cups.
Shredded tasty or cheddar cheese 1 cup.
Cream Cheese 1 cup at room temperature.
Fetta Cheese 1 cup crumbled.
Ricotta Cheese 1 cup.
2 eggs
1 Teaspsoon of pepper.
