Foxtail millet is great source of nutrients. Since using this millet directly
instead of rice may not impart a great taste as it will not absorb the water
quickly and remains slightly hard even after cooking for a longer time.
I have tried this recipe & this has been one of the hit recipe in my home.

Ingredients:
The Foxtail millet Idli recipe includes the following items
For Foxtail Millet Idli preparation:
(1 Cup of millet is sufficient for 6 Idlis)
1) Foxtail millet (Navane) - 1 cup
2) Urad dal - 1/4 cup
3) Salt to taste
4) Carrot (grated) - 2 to 3 tbsp
5) Spinach (cut) - 2 to 3 tbsp
6) Oil - 1 tbsp (for tempering)
7) Mustard seeds - 1 tsp
8) Water - as needed)
For Chutney preparation :
1) Fresh Coconut - 1 cup
2) Roasted gram (Putani) - 1/4 cup
3) Ginger - a small piece
4) Tamarind - a leaf or two
5) Salt to taste
6) Fresh Coriander - 1/4 cup
7) Chilli Powder - 1 tsp OR Green chillies - 2 to 3
8) Water - as needed
Tips n Tricks:
1) Any vegetables of your choice can be added.
2) This recipe can be done by replacing the Foxtail millet
with Quinoa (keeping the quantity same)
