Resep Ikan Bakar Teflon (untuk 5 porsi)
Bahan marinasi ikan:
400 gr ikan tilapia filet
1 ½ sdt kaldu bubuk
1/8 sdt merica
2 sdm maizena
1-2 sdm putih telur
Bahan bumbu halus:
8 butir kemiri, sangrai
15 siung bawang putih
8 siung bawang merah
1 sdm ketumbar, sangrai
3 cm kunyit
2 cm jahe
2 sachet terasi, bakar
80 ml minyak
50 ml air
Bahan lainnya:
3 lembar daun jeruk
1 lembar daun salam
2 sdm saus tiram
½ sdm kecap maggi
100 ml kecap manis
2 sdm margarin
2 sdm saus tomat
1 sdm saus sambal
1 sdt kaldu bubuk
¼ sdt merica
150 ml air
Pelengkap:
nasi putih
sambal tomat
Cara membuat:
1. Potong ikan lalu marinasi dengan kaldu bubuk, merica, maizena dan putih telur, aduk rata
2. Di dalam blender masukkan kemiri, ketumbar, bawang putih, bawang merah, kunyit, jahe, terasi, minyak dan air, blender hingga halus
3. Panaskan wajan, masukkan bumbu halus, merica, daun salam dan daun jeruk, tumis hingga wangi dan mengeluarkan minyak
4. Masukkan air, kecap manis, saus tiram, kaldu bubuk dan kecap maggi, masak sesaat kemudian masukkan margarin, aduk rata
5. Masukkan saus tomat dan saus sambal, masak sesaat
6. Panaskan sedikit minyak, masukkan ikan, masak kedua sisi ikan hingga sedikit kecokelatan kemudian oles dengan bumbu bakar, masak hingga matang dan meresap
7. Ikan bakar teflon siap disajikan

Pan-Grilled Fish Recipe (yield 5 servings)
Fish Marinade ingredients:
400 g tilapia fillet
1½ tsp stock powder
1/8 tsp pepper
2 tbsp cornstarch
1-2 tbsp egg white
Spices:
8 pc candlenut, toasted
15 clove garlic
8 pc shallot
1 tbsp coriander, toasted
3 cm turmeric
2 cm ginger
2 sachet shrimp paste, roasted
80 ml oil
50 ml water
Other ingredients:
3 pc kaffir lime leaf
1 pc bay leaf
2 tbsp oyster sauce
½ tbsp Maggi sauce
100 ml sweet soy sauce
2 tbsp margarine
2 tbsp ketchup
1 tbsp chili sauce
1 tsp stock powder
¼ tsp pepper
150 ml water
Add-ons:
White rice
Tomato sambal
Steps:
1. Slice the fish, then marinate with stock powder, pepper, cornstarch, and egg white. Mix well.
2. In a blender, add candlenuts, coriander, garlic, shallots, turmeric, ginger, shrimp paste, oil, and water. Blend until smooth.
3. Heat a pan. Add the blended spices, pepper, bay leaf, and kaffir lime leaves. Sauté until fragrant and oily.
4. Add water, sweet soy sauce, oyster sauce, stock powder, and Maggi sauce. Cook briefly, then add margarine and stir well.
5. Add ketchup and chili sauce. Cook briefly.
6. Heat a little oil. Add the fish and cook both sides until lightly browned. Brush with the grilling sauce. Grill until fully cooked and the flavors are absorbed.
7. Pan-Grilled Fish is ready to be served.
