Ingredients
- 1kg beef mince 80/20
- 130g panko bread crumbs
- 160ml milk
- 1 onion (white or brown)
- 1 tbsp garlic powder
- 1 tbsp fresh thyme
- 1 tbsp smoked paprika
- 2 eggs
- 10 dashes Worcestershire sauce
- Salt and pepper to taste
- 200ml tomato sauce
- 50ml apple cider vinegar
- 50g sugar (brown works best but I didn’t have any handy)
Method
1. Preheat your oven to 160c.
2. Start by mixing your breadcrumbs, milk, paprika, thyme and garlic together. Once the bread crumbs have absorbed all the milk, mix through two beaten eggs.
3. Next, with your hands mix the beef mince through the bread and egg mixture until it’s really well combined.
4. Press this into a greased bread tin and turn out onto a lined oven tray. Place this in the oven for 15 minutes.
5. While this is in the oven, over a medium heat add the tomato sauce, apple cider vinegar and sugar, and heat until the sugar is dissolved to make your glaze.
6. After the first 15 minutes, glaze the meatloaf with ½ of the glaze and return to the oven for another 15 minutes.
7. Glaze with the final ½ of the glaze and return to the oven for the final 20 minutes, or until the internal temp reaches 70c.
8. Rest the meatloaf for 10 minutes before you slice and serve. Goes well with mash potatoes and greens. Enjoy!
