SAVE this post & make a @columbusmeats SPOOKY HAND CHARCUTERIE for Halloween. @columbusmeats are my-go’s for serving up delicious, high-quality charcuterie and their Prosciutto and Italian Dry Salame are key to making this ghoulish spread. Full instructions ⬇️
INGREDIENTS
* 15.9 oz Gournay Garlic & Herb Cheese (or other soft cheese)
* 3 oz @columbusmeats Prosciutto
* 4 oz/22 slices @columbusmeats Italian Dry Salame
* 3 oz/11 ciliegine
* 1 oz/11 green olives stuffed with pimentos
* 8 oz/20 blackberries
* 4 oz/10 dried apricots
* 5 sprigs rosemary
* 4 oz crackers
SUPPLIES: plastic wrap & long toothpicks/skewers
INSTRUCTIONS: ⬇️
FOR THE HAND:
1. Line a bowl with plastic wrap and combine 10.6 ounces of herb cheese and shape into a ball.
2. Flatten onto a cutting board lined with parchment paper and start shaping into a hand.
3. Use the remaining 5.3 oz of herb cheese to create the “wrist” and fill in any extra you need on top of the hand.
4. Carefully flip the finished hand onto the surface of your choice, and peel off the parchment paper.
5. Layer strips of @columbusmeats Prosciutto onto the cheese mold to create the “flesh.”
6. Chill until ready to serve so that the hand is easier for guests to cut into.
FOR THE EYE BOUQUET (makes 10 skewers)
7. Slice off the top third of a ciliegine and the top third of a green olive; set aside the “bottom” of the ciliegine and the “top” of the olive.
8. Layering two slices of Italian Dry Salame, fold in half, and connect the two ends together into the shape of a rosette.
9. Carefully place the ciliegine into the rosette with the “flat” side up, then set the olive “eye” on top of the ciliegine.
10. Skewer a blackberry, dried apricot, and another blackberry. Carefully skewer the “eye rosette”, making sure it skewers the two ends and the ciliegine together. Make nine more skewers and set aside.
Lay the bouquet next to the hand on your board, style with your crackers of choice, and enjoy this spooky treat!
