A slow cooker soup made with broccoli, creamer potatoes, onions, and garlic. With just 5 ingredients you can be enjoying this simple recipe for dinner.

Ingredients
• 4 cups (about 600g) any varietal Little Potatoes, quartered
• 1/2 cup onion, finely chopped
• 1 tsp garlic, minced
• 1/2 tsp salt
• 1/4 tsp pepper
• 3 cups vegetable broth
• 3 cups broccoli florets
Directions
1. Place Little Potatoes, onion, garlic, salt, and pepper in a 3 to 4 quart slow cooker. Pour in broth and stir to combine.
2. Cover and cook on low for 6 to 8 hours, or high for 3 to 4 hours, just until potatoes are tender.
3. Stir in broccoli, cover, and cook another 30 minutes or low on 15 minutes on high, until broccoli reaches desired tenderness. Serve.
Note:
For a creamy soup, remove half of the potatoes and broth before adding the broccoli and purée in a food processor or blender designed for hot foods. Alternatively, use an immersion blender to puree some of the potatoes in the slow cooker. Then add the broccoli and finish cooking.
