There are many father's day cake ideas out there but this cake is perfect for mother's day since ube/purple yam is healthy and is rich in fiber.
I have lessen the sugar in this cake.
Ingredients:
For the Ube Cake Batter:
180 grams cake flour
75 grams sugar
1 and 1/2 teaspoon baking powder
1/4 teaspoon salt
6 large egg yolks
90 ml milk
90 ml oil
100 grams ube halaya / ube jam /purple yam
1 tablespoon ube flavor / extract
1 teaspoon purple / violet food color
For the meringue:
6 large egg whites
1/4 cream of tartar
35 grams sugar
Oven temperature: 120 degrees Celsius
Baking time (Conventional oven): 1 hour and 30 minutes
Cake pan size: 7 inches x 2 pieces (ungreased; lined with parchment paper

IMPORTANT:
Please keep in mind that in baking, weight measurements between dry ingredients and wet ingredients are totally different.
FOR EXAMPLE:
2 cups flour = 240 grams
2 cups cocoa powder = 200 grams
2 cups water = 480 ml / grams
Please keep in mind that there is a proper way on how to measure dry ingredients.
Therefore, it is always safe to use grams when measuring dry ingredients and ml to measure wet ingredients.

For the Whip cream frosting:
250 ml fresh whip cream (non-dairy; you can use dairy whip cream, just add 1 tablespoon of sugar).

For the soaking syrup:
1/2 cup sugar
1 cup water

How do you make simple syrup from scratch?
Steps
Add the sugar and water to a small saucepan over medium heat.
Stir until sugar is dissolved.
Let cool, then pour into a glass jar and seal tightly with a lid.
Simple syrup will keep, refrigerated, for about one month
