Ingredients
Ivy Gourd - 250 Gms
Oil - 3 Tbsp
Whole Spices
(Cinnamon, Clove & Cardamom)
Shahi Jeera - 1/2 Tsp
Fennel Seeds - 1/2 Tsp
Onion - 2 Nos Finely Chopped
Tomato Puree
Ginger Garlic Paste - 1 Tsp
Turmeric Powder - 1/4 Tsp
Chilli Powder - 2 Tsp
Coriander Powder - 1 Tsp
Cumin Powder - 1 Tsp
Salt
Water
Roasted Peanuts - 1/4 Cup
Garam Masala - 1 Tsp
Sugar - 1/2 Tsp
Ginger Julienne
Green Chilli
Kasuri Methi
Method:
1. Wash and clean the ivy gourd. Chop off the edges and make slits in the tindora as shown in the video.
2. Take a wide pan, add oil to it and put the slit tindora in it.
3. Keep stirring them and fry them for 10 mins until they slightly change in colour.
4. Once they are all nicely fried, remove them from the pan and keep them aside.
5. To the same pan, add the whole spices, shah jeera, fennel seeds and saute.
6. Add in the chopped onions and saute until they are golden brown in colour.
7. Add the ginger garlic paste and roast until the raw smell goes off.
8. Then add turmeric powder, chilli powder, coriander powder, cumin powder, salt and mix well.
9. To this masala, add the tomato puree and cook for 5 mins.
10. After 5 mins, pour 1/2 cup of water and keep boiling the curry.
11. In the meanwhile, put some roasted peanuts in a mixer jar after peeling their skin off. Grind it all into a fine powder.
12. Add this powder to the gravy and mix it all well.
13. Add in some water again and give it a nice mix. Now drop in the fried tindora, mix everything well, cover the pan with a lid and cook the curry for 10 mins.
14. After 10 mins, the oil separates from the gravy. At this point, add in the garam masala powder, sugar and mix it all well.
15. Finally add some ginger juliennes, slit green chillies and crushed kasuri methi. Give it all a quick mix.
16. Yummy and delicious Tindora Masala Gravy Curry is ready to be served hot with roti, phulka, plain steamed rice or any flavoured rice of your choice.
