Easy Baked Biscoff Cheesecake
Ingredients:
210g. Speculoos Cookies ( crushed into fine cookies)
75g. Butter ( melted )
600g. Cream Cheese
3 pcs. Eggs
100g. White Sugar
100ml. Heavy Cream
2 tbsps. Flour
1/4 cup Biscoff Spread
Extra: for decoration
125g. Biscoff Spread (melted)
Fresh Raspberries
Fresh Whipped Cream:
1 cup Heavy Cream
1 tbsp. White Sugar
1 sachet Vanilla Sugar ( 8g. )
Instructions:
1. Prepare baking pan by placing a non stick round baking paper.
2. Crush cookies into fine pieces and mix with melted butter. Pressed the cookie mixture on the prepared baking pan and chill in the fridge.
3. Mix the cream cheese, white sugar using a mixer. Add the eggs, heavy cream, flour and Biscoff spread until smooth.
4. Pour the cream cheese mixture on the baking pan.
5. Bake at 190°C for 45 to 50 minutes.
6. Let it cool down for 4 hours or overnight.
7. Melt the extra Biscoff spread in the microwave for 1 minute. Spread the melted Biscoff on top of the cheesecake. Chill in the fridge for 20 minutes.
8. Decorate further with whipped cream and fresh raspberries.
